Tarte Tatin 

For me there is only one Tarte Tatin recipe and that is from Laduree

this recipe makes 4 individual tarts

You can of course make your own puff pastry but there really are so many good buttery ones out there that i find them just as good 

Apples and Caramel 

6 golden delicious

50ml water

150g castor sugar 

65 grams salted butter

Peel, core and cut the apples into slices. In a saucepan warm the water and sugar until the mixture has a nice caramel colour . Remove from the heat and add the butter. stir carefully then pour a 5mm layer into four 10cm ramekins.Preheat oven to 160degrees and generously layer the apple slices into them ( they should be higher than the dish ) cook for 90mins and then take out of the oven and leave to cool .Cover each ramekin with a cicle of pastry to fit and bake for 35 mins.Leave to cool  then refridgerate when ready to serve stand the ramekins in a tray of boiling water ,run a knife around to release.
